I absolutely hated cooking at school…or home economics as it was also called. I hated the whole rigmarole of weighing and measuring ingredients the night before and putting them in a biscuit tin to walk to school with. I lived a good 20 min walk from my school and I detested the walk in with this big ole tin full of ingredients that would inevitably spill or, sometimes, in the case of eggs, break. The only thing I ever made during those lessons at school that I made again outside of the class kitchen was Bread & Butter pudding., I had a particularly disastrous time with a Victoria Sandwich when my eggs broke on the way to school and the teacher tried to make me salvage what I could from the bottom of the biscuit tin. Needless to say my practically eggless Victoria sponge did not rise to the occasion and my Mum suggested we use the ‘sponge’ as a base for a trifle…or throw it away. You could say it was a bakery horror story!
